
The Société d'aide au développement de la collectivité (SADC) Matawinie would like to highlight the audacity of Émilie Bergeron, Micheline Sylvestre and Pierre Sylvestre, who embarked on a brand new adventure barely a year ago. They decided to set up a saffron farm in the Lanaudière region. This emerging product, still little-known in Quebec, is now produced in Saint-Damien. The SADC is proud to have granted them financial support of 13,500 $ through its Stratégie jeunesse program.
The three business partners met during a training session on the identification and harvesting of non-timber forest products (NTFPs) given by SADC Matawinie and the Association forestière de Lanaudière. Graduates of the first cohort, they were united by a passion for nature and innovative agriculture. After several meetings with Pur Safran, Canada's first commercial saffron grower, they decided to embark on this exciting adventure.
The first saffron harvests took place last October and November. Their processed products were sold at the Brandon Christmas market. The Emporium Safran Québec team now intends to expand production and distribute their products to other points of sale. One thing's for sure, you won't have heard the last of them. They'll be representing Lanaudière at MONTREAL HIGH LIGHTS. Come and see them!
Lanaudière's first saffron farm offers you products from its fall 2014 harvest. The owners wish to share their passion and knowledge of this little-known spice, as well as several recipes. You'll be amazed by saffron's many uses. During culinary workshops at Marché Jean-Talon, chefs Marie-Ève Dubeau of bistro L'Ange Cornu, Olivier Delcol of traiteur Daniel Choquette and Éliane Neveu of Champs Gourmands will be using products from Emporium Safran Québec.
